Split Pea Soup
|Meaty ham bone/Ham hock||1|
|Split peas||1 Pound, rinsed and sorted|
|Lean bacon slice||5 , chopped|
|Carrot||1 , chopped|
|Chopped onion||1 Cup (16 tbs)|
|Parsley||1⁄4 Cup (4 tbs)|
|Green onion/Green part of leeks||1⁄2 Cup (8 tbs)|
|Freshly ground black pepper||To Taste|
Place ham hock, split peas, and water in a large soup kettle and bring to boil.
Reduce heat and simmer, covered.
Saute' bacon until fat is rendered.
Stir in carrot and onion.
Saute' until bacon is browned.
Add to soup kettle with the rest of the ingredients.
Simmerfor3 hours or until meat falls off the bone.
Slice meat into serving pieces and discard bone.
Add meat to soup; taste and correct seasonings.
