|Onion||1 Small, finely chopped|
|Plain flour||3⁄4 Ounce|
|Tomato puree||3 Tablespoon|
|Cheese||4 Ounce, grated (Cheddar Or Cheshire)|
Melt the butter and lightly fry the onion.
Mix in the flour, and cook for a minute.
Add the milk, water and tomato puree, and bring to the boil stirring all the time.
Season and simmer gently for 5 minutes.
Add good pinch of sugar to taste and stir in the grated cheese, just before serving.
Reheat to melt the cheese and serve garnished with croutons.
