Tasty Cream Of Asparagus Soup
|Water/White stock||1 Pint|
|Onion||1 , chopped|
|Thin white sauce||3⁄4 Pint|
|Single cream||1 Tablespoon|
|Chopped chives||1 Tablespoon|
Cut the asparagus into small pieces.
Toss in the melted butter, cook for 5 minutes.
Add the water or stock and onion.
Simmer steadily until the asparagus is very soft, then rub through a hair sieve.
Reheat the asparagus puree and add to the hot sauce.
Season and heat gently, stirring in the cream.
Garnish with chopped chives
