Cock A Leekie Soup

Ingredients
  Broiler fryer chicken 3 Pound, cut up
  Water 4 Cup (64 tbs)
  Finely chopped carrot 1⁄2 Cup (8 tbs)
  Finely chopped celery 1⁄2 Cup (8 tbs)
  Finely chopped onion 1⁄4 Cup (4 tbs)
  Parsley sprigs 2
  Salt 2 Teaspoon
  White pepper 1⁄4 Teaspoon
  Bay leaf 1
  Thinly sliced leeks 1 1⁄2 Cup (24 tbs)
  Potato 1 Small, peeled and chopped
  Quick cooking barley 1⁄2 Cup (8 tbs)
  Light cream/Milk 2 Cup (32 tbs)
Directions

In a large kettle or Dutch oven combine chicken and water.
Add carrot, celery, onion, parsley, salt, white pepper, and bay leaf.
Cover; simmer for 25 minutes or till chicken is tender.
Remove chicken, bay leaf, and parsley from broth.
Discard bay leaf and parsley.
Cool chicken till it can be handled easily.
Remove meat from bones; discard bones.
Chop meat.
Skim off excess fat from broth.
Add leeks, potato, and barley to soup.
Bring to boiling.
Reduce heat; simmer, covered, 15 to 20 minutes.
Blend in cream or milk and chicken.
Heat through.
Top with sliced leeks, if desired.
