Ham Bone Soup
|Trimmed ham bone||1 (Or More)|
|Canned tomatoes||6 Ounce (1 Medium Can)|
|Dried parsley||1 Teaspoon|
|Carrots||3 , cut up|
|Cabbage head||1⁄2 Small, cut up|
|Diced potatoes||2 Large|
Place ham bone in two-gallon pot, add water, tomatoes, parsley, celery, peppercorns, barley, carrots and salt to taste.
Boil for 2 hours, add cabbage and potatoes and cook for another half-hour.
More carrots can be used, also more cabbage and a little catsup to improve the flavor.
The ham bone does not need to be trimmed too much, as parts of ham add to the flavor of the soup.
