Rich Brown Soup
|Butter/Margarine||2 Ounce (60 Gram)|
|Flour||2 1⁄2 Ounce (75 Gram)|
|Water||1 1⁄4 Pint (700 Milliliter)|
|Beef stock||3⁄4 Pint (420 Milliliter)|
|Worcestershire sauce||1 Dash|
|Grated cheese||1 Tablespoon|
|Parsley||1 Tablespoon (For Garnish)|
1. Heat the butter or margarine in a large pot until melted. Stir in the flour, then cook over a low heat, stirring constantly, until the flour is a rich brown colour.
2. Gradually stir in the water and stock. Stir constantly while adding the liquid to prevent lumps from forming.
3. Add some salt and pepper and Worcestershire sauce. Cover the pot and simmer slowly for about 2 hours to fully develop the flavour.
4. Serve sprinkled with grated cheese and garnished with parsley.
