Rich Cream Of Asparagus Soup
|Asparagus||1 1⁄2 Pound|
|Onion||1 , finely chopped|
|Carrot||1 , thinly sliced|
|Celery stalks||2 , thinly sliced|
|Potatoes||2 , peeled and chopped|
|Seasoned salt||1 Tablespoon|
|Canned chicken broth||3 Cup (48 tbs)|
|Light cream||1 Cup (16 tbs)|
|Thinly sliced boiled ham||1⁄2 Cup (8 tbs), cut in small pieces|
Cut clean asparagus stalks into 1-inch pieces.
Place asparagus, onion, carrot, celery, potatoes, salt and broth in a 2-quart glass bowl.
Cover and microwave on high for 11 to 15 minutes until vegetables are tender.
Let stand, covered, 5 minutes.
Puree soup in a blender.
Add cream and ham.
Heat on high 5 more minutes.
