Onion Soup With French Bread
|Onions||2 Pound (1 Kilogram)|
|Garlic||1 Clove (5 gm), peeled and chopped|
|Butter||3 Ounce (75 Gram)|
|Boiling water||3 Pint (1.8 Liters Or 7.5 Cups)|
|Ground black pepper||To Taste|
|Egg yolks||3 , beaten|
|French bread||1 , cut in rounds|
Melt butter in a large heavy-bottomed saucepan, and saute garlic and onions until they begin to soften.
Season, cover, and cook for 40 min over a very low heat.
Add flour, and stir in well.
Pour on boiling water and simmer for 20 min.
Remove a ladleful of liquid and mix with beaten eggs.
Return this to the soup, and cook for a further 10 min without boiling.
Meanwhile bake slices of French bread in the oven.
Place one slice in each bowl, and pour on the onion soup.
