Easy Cheesy Vegetable Soup
|Frozen broccoli cauliflower and carrot||2 Cup (32 tbs)|
|Peeled cubed potatoes||1 Cup (16 tbs) (1/4-Inch Cubes)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Canned ready to serve chicken broth||14 1⁄2 Ounce (1 Can)|
|Condensed cream of mushroom soup||10 3⁄4 Ounce (1 Can)|
|Pasteurized process cheese spread||1⁄2 Pound, cut into 1/2-inch cubes|
In 2-quart casserole, combine frozen vegetable mixture, potato, onion and celery.
Microwave at High for 7 to 10 minutes, or until vegetables are tender, stirring once.
Mash vegetables slightly if desired.
Mix in remaining ingredients.
Microwave at High for 6 to 9 minutes, or until cheese melts and mixture can be stirred smooth, stirring twice.
