Cold Yogurt and Cucumber Soup
|Cucumber||1 , peeled and diced|
|Chicken stock||2 Cup (32 tbs)|
|Garlic||2 Clove (10 gm), crushed|
|Yogurt||2 Cup (32 tbs)|
|Lemon||1⁄2 , juiced|
|Dried coriander||1 Pinch|
|Iced water||1 Cup (16 tbs)|
|Thin lemon slices||6 (Very Thin Slices)|
|Chopped walnuts||2 Tablespoon|
Put cucumber and stock in a saucepan and simmer until the cucumber is just tender.
Combine the garlic, yogurt, lemon juice and coriander.
Stir into the chilled soup with iced water.
Serve topped with lemon slices and sprinkled with chopped walnuts.
