Easy Split Pea Soup
|Split peas||2 Cup (32 tbs)|
|Onion||1 , chopped|
|Carrot||2 , sliced|
|Celery||1 Cup (16 tbs), chopped|
Soak the peas in water to cover for 12 hours and drain.
Place in a large pot with 3 quarts water and ham hock and simmer, covered, for 2 hours.
Add the onion, carrots and celery and simmer, covered, for 1 hour.
Remove the ham hock and cut the meat into small pieces.
Press the vegetables through a sieve and add the meat and salt.
Pour into hot pint jars to 1 inch from the top.
Process at 10 pounds pressure for 50 minutes.
