Lima Bean Soup
|Chopped onion||1⁄2 Cup (8 tbs)|
|Chopped carrot||1⁄4 Cup (4 tbs)|
|Sweet margarine||2 Teaspoon|
|Frozen green lima beans||1 Cup (16 tbs)|
|Canned ready-to-serve low-sodium chicken broth||1 Cup (16 tbs)|
|Pepper white||1 Dash|
1. In 1 1/2-quart microwavable casserole combine first 3 ingredients. Microwave on High (100%) for 2 minutes until margarine is melted; add beans and broth. Cover and microwave on High for 5 minutes. Let cool slightly.
2. Transfer to blender and process until smooth. Return to casserole and microwave on High for 2 minutes, until thoroughly heated. Stir in pepper.
