Beef Potato Soup
|Scalloped potatoes||5 5⁄8 Ounce (1 Package)|
|Water||7 Cup (112 tbs)|
|Canned beef broth||20 Ounce (2 Cans, 10 Ounce Each)|
|Canned tomato paste||12 Ounce (2 Cans, 6 Ounce Each)|
|Diced celery||1 Cup (16 tbs)|
|Frozen peas and carrots||10 Ounce (1 Package)|
|Instant minced onion||1⁄4 Cup (4 tbs)|
|Salt||1 1⁄4 Teaspoon|
|Ground beef||1 Pound|
Combine all the ingredients except the beef in a 6-quart stew pot, then bring to a boil over moderate heat.
Drop heaping teaspoonfuls of beef into the boiling mixture.
Bring to a boil again, then reduce the heat and cover.
Simmer for 30 to 40 minutes or until vegetables are tender.
