Curried Black Bean Soup
|Condensed black bean soup||1 Can (10 oz) (1 Can)|
|Cold water||1 1⁄3 Cup (21.33 tbs)|
|Curry powder||1⁄4 Teaspoon|
|Grated lemon rind||1⁄4 Teaspoon|
1. Combine soup, water, curry powder and grated lemon rind in an electric-blender container or in a bowl; cover and whirl mixture until smooth. Chill.
2. Pour into chilled glasses or cups. Garnish with lemon slices and sieved hard-cooked egg, if you wish.
