Curry Celery Soup
|Celery||1⁄2 Cup (8 tbs), finley diced|
|All purpose flour||2 Tablespoon|
|Curry powder||1 Teaspoon|
|Skim milk||1 Cup (16 tbs)|
|Water||3 Cup (48 tbs)|
1. Saute celery lightly in butter or margarine in a medium-size saucepan. Blend in flour, curry powder, salt and pepper; slowly stir in milk and water.
2. Cook, stirring constantly, until mixture thickens slightly and starts to boil; cover. Simmer 10 minutes.
3. Ladle into heated soup bowl.
