Leek And Cheddar Soup

Ingredients
  Onion 1 Small, diced
  Butter 2 Tablespoon
  Flour 1 Tablespoon
  Chicken broth 2 1⁄2 Cup (40 tbs)
  Potatoes 2 Medium, coarsely grated
  Leeks 4 , sliced thinly, both white and green parts
  Chopped celery 1⁄4 Cup (4 tbs)
  Dry mustard 1⁄4 Teaspoon
  Chopped parsley 1 Tablespoon
  Milk 1 1⁄2 Cup (24 tbs)
  Grated mild cheddar cheese 3⁄4 Cup (12 tbs)
  Paprika To Taste
  Salt To Taste
  Pepper To Taste
Directions

Simmer onion in the butter until soft.
Stir in the flour and next five ingredients.
Cover and simmer about 1 hour.
Add parsley, milk and cheese and heat thoroughly without boiling, until cheese melts.
Taste for seasoning.
