Light And Lemony Chicken And Spinach Soup

Ingredients
  Homemade chicken stock 2 Cup (32 tbs)
  Fresh lemon juice 2 Teaspoon
  Dried thyme 1⁄4 Teaspoon, crushed
  Salt 1⁄8 Teaspoon (optional)
  Spinach leaves/Other greens such as escarole 4 , rinsed and torn
  Green onion tops 1 , thinly sliced
Directions

In a 1 -quart saucepan, bring stock, lemon juice, thyme and salt to a boil.
Put torn leaves of fresh spinach into individual soup bowls and pour hot soup over them.
Top with green onions.
Serve immediately.
