Light And Lemony Chicken And Spinach Soup
|Homemade chicken stock||2 Cup (32 tbs)|
|Fresh lemon juice||2 Teaspoon|
|Dried thyme||1⁄4 Teaspoon, crushed|
|Salt||1⁄8 Teaspoon (optional)|
|Spinach leaves/Other greens such as escarole||4 , rinsed and torn|
|Green onion tops||1 , thinly sliced|
In a 1 -quart saucepan, bring stock, lemon juice, thyme and salt to a boil.
Put torn leaves of fresh spinach into individual soup bowls and pour hot soup over them.
Top with green onions.
