Cucumber Soup

Ingredients
  Cucumbers 2 Medium
  Buttermilk 1 1⁄2 Cup (24 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Instant onion 1 Teaspoon, minced
Directions

Wash one cucumber but do not pare; cut 4 to 6 thin slices and reserve for garnish.
Pare remaining cucumber and cut both cucumbers into 3/4 -inch slices.
Pour 1/4 cup of the buttermilk into blender container; add half the cucumber slices and blend on high speed until smooth.
Add remaining slices, the salt, pepper and onion.
Blend until smooth, about 1 minute.
Stir in remaining buttermilk.
Chill.
Serve in cups and garnish each with reserved cucumber slice.
