Fresh Melon And Mango Soup
|Peaches||2 Medium, peeled, pitted and cubed|
|Ripe mangoes||2 Large, peeled, pitted and cubed|
|Ripe cantaloupe||1 Small, peeled, seeded and cubed|
|Frozen unsweetened strawberries||3 Cup (48 tbs)|
|Frozen orange juice concentrate||1⁄3 Cup (5.33 tbs)|
|Plain nonfat yogurt||1⁄2 Cup (8 tbs)|
|Lime||1⁄2 , juiced|
|Port wine||1⁄3 Cup (5.33 tbs)|
|Orange liqueur||2 Tablespoon|
|Raspberry vinegar||1 1⁄2 Teaspoon|
|Plain non fat yogurt||1⁄2 Cup (8 tbs) (for garnish)|
In the workbowl of food processor fitted with a metal blade, process all ingredients until thick and creamy.
Pour into a serving bowl and freeze for about 20 minutes.
Spoon into individual bowls and garnish each serving with a heaping teaspoon of yogurt.
