Cream Of Watercress Soup

Ingredients
  Watercress 3 Bunch (300 gm)
  Chicken broth 3 Cup (48 tbs)
  Chopped onion 1⁄4 Cup (4 tbs)
  Bay leaf 1⁄2
  Cayenne 1 Pinch
  Thyme 1 Pinch
  White sauce mix/1 cup homemade medium thick white sauce 1
  Sweet cream/Sour cream / milk 2 Tablespoon
Directions

Wash watercress and slice.
Pile into a saucepan and add the next five ingredients.
Cover and simmer 10 minutes.
Uncover and cook 5 minutes.
Discard bay leaf.
Pour into a blender and whiz until pureed or press through a fine sieve or col-lander.
Prepare sauce mix according to directions and stir in the watercress mixture.
Chill thoroughly.
Dilute to taste with sweet or sour cream.
Correct seasoning.
Garnish soup made with sweet cream with chopped parsley or chives.
Soup finished with sour cream may be topped with grated radishes or chopped fresh dill.
