Farm Style Bean Soup
|Dry white beans/Navy beans||1 1⁄2 Cup (24 tbs)|
|Water||6 Cup (96 tbs)|
|Salt pork||1⁄4 Pound, diced|
|Onions||3 Large, sliced|
|Beef extract||1⁄2 Teaspoon|
|Lean beef brisket/Shank||3 Pound|
Wash beans, soak overnight in the water.
Fry the diced salt pork slowly until lightly browned, using a large heavy pan.
Add onions and cook until soft.
Pour in beans and water, then add remaining ingredients.
Cover closely and simmer for 2 1/2 to 3 hours, or until both meat and beans are tender, adding more hot water if necessary.
Taste for seasoning.
Before serving time, lift meat out of the soup and slice.
