Curried Split Pea Soup
|Split peas||1 Cup (16 tbs) (Picked Over And Rinsed)|
|Tomato juice||2 Cup (32 tbs)|
|Water||3 Cup (48 tbs)|
|Uncooked bacon slice/Chunk of diced salt pork / ham hock||4|
|Onion powder||1 Teaspoon|
|Garlic powder||1⁄2 Teaspoon|
|Chopped celery||1 1⁄2 Cup (24 tbs)|
|Chopped carrots||1 1⁄2 Cup (24 tbs)|
|Curry powder||1 Teaspoon (Or To Taste)|
|Salt||1⁄2 Teaspoon (Or To Taste)|
|Chopped fresh parsley||2 Teaspoon|
Combine peas, juice, water, pork, onion powder, and garlic powder in a Dutch oven.
Cook gently until peas are tender, about 1 hour.
Add celery, carrots, curry powder, and salt.
Cover and simmer until vegetables are tender.
Add more liquid if needed.
Just before serving, stir in parsley.
