Chilled Avocado Soup
|Ripe avocado||1 Large|
|Scallions||2 , cut in pieces|
|Cold chicken broth||1 1⁄2 Cup (24 tbs) (well seasoned)|
|18 % cream||1 1⁄2 Cup (24 tbs)|
Peel avocado and remove the pit.
Drop pieces of avocado into a blender.
Add scallions, chicken broth, lemon juice and nutmeg.
Cover and blend until smooth.
Add cream and salt and pepper to taste.
Chill until icy cold and serve garnished with thin lime or lemon slices and chopped parsley.
To serve hot, reheat soup in the top of a double boiler.
