Winter Curried Parsnip Soup
1 In a large pot, melt the butter.
2 Add in the onion and saute lightly.
3 Add in the peeled and chopped parsnips and cook, stirring until soft.
4 Sprinkle in the curry powder and cumin. Stir well.
5 Add in the vegetable stock along with salt and pepper.
6 Briefly bring to a boil and then lower the heat and let simmer for 30 minutes.
6 Remove from the heat and allow to cool for about 5 minutes.
7 Add in the sour cream and blend using a hand blender as shown in the video.
8 Serve poured in individual soup bowls.
