High Protein Stilton Cheese and Celery Soup
1 In a stockpot, melt the butter.
2 Add in the chopped onion and leek.
3 Cook stirring for about 5 minutes, until the leeks are soft.
4 Meanwhile, chop the celery as shown in the video.
5 Add the celery to the pot as well.
6 Cook, stirring to soften a bit.
7 Simmer for about 2 minutes.
8 Sprinkle the rye flour and mix well to coat the vegetables.
9 Pour in the beef stock gradually.
10 Add in the stilton cheese and cook gently, stirring.
11 Let the stilton melt and add in the pepper.
12 Pour in the milk to make the soup more creamy.
13 Stir and cook briefly.
14 Correct the seasoning and serve in individual soup bowls accompanied with a salad or your favorite protein dish.
