Satin Pea Soup
|Frozen peas||10 Ounce, defrosted and drained (1 Package)|
|Chopped leeks||1⁄2 Cup (8 tbs)|
|Lettuce leaves||12 Large|
|Chicken broth||1 1⁄2 Cup (24 tbs)|
|Dried chervil||1⁄2 Teaspoon|
|White pepper||1⁄8 Teaspoon|
|Light cream||1⁄2 Cup (8 tbs)|
In a large saucepan, simmer together the peas, leeks, spinach, lettuce, chicken broth, chervil, and pepper.
Simmer with the lid on for 20 minutes.
Pour the mixture into a food processor and process until smooth.
Pour the soup through a sieve back into the saucepan. Add the light cream and butter. Simmer another 20 minutes.
Serve in bowls garnished with a few finely cut ribbons of spinach floating on top.
