Oxtail Soup

Inspired by eating Oxtail in Jamaica. The microdac version uses the Pressure cooker for quicker cooking.
Ingredients
Main ingredients
  Ox tail 2 Pound
  Salt and pepper To Taste
  Water 4 Cup (64 tbs)
  Onion 1 , chopped
  Tomato 1 , chopped
  Scallion 1 , chopped
  Yellow bell pepper 1 , chopped
  Butter beans 1⁄2 Cup (8 tbs)
  Coca cola 1⁄4 Cup (4 tbs) (Optional)
  Browning 1 Teaspoon
For marinade
  Garlic cloves 2 Chopped
  Thyme 1⁄2 Teaspoon
  Scallion 2 , chopped
  Scotch bonnet pepper 1⁄3 Small
  Ginger 10 Gram
  Pimento 1 Teaspoon, crushed
Directions

GETTING READY
1. Season the ox tail with little salt and more pepper.
2. Heat a pan, place the ox tail, cook until brown from both sides.
3. In a pressure cooker, place all ingredients of the marinade along with the browned oxtail. Refrigerate overnight.

MAKING
4. To the pressure cooker, add enough water to entirely cover the meat, allow to boil and put the lid on, cook for about 30 minutes or follow the pressure cooker instructions. Allow to the pressure cooker to cool down.
5. Add onion, tomato, scallion, bell pepper, butter beans, coca cola and browning, simmer for 30 minutes.

SERVING
6. Serve hot with croutons.
