Step1-Simmer turkey carcass, celery, onion, salt and bay leaf in water about 120 minutes. Turn turkey if necessary during cooking.
Step2-Remove carcass. Strip meat from bones and add to broth. Bring soup to a boil and add soup mix.
Step3- Small amounts of cooked vegetables such as peas, corn or carrots may be added with the soup mix.
Step4-Simmer about 15 minutes.
