South Of The Border Chicken Soup
|Bacon||1⁄4 Pound, cut into pieces|
|Onions||2 Medium, chopped|
|Cubed cooked chicken||1 Cup (16 tbs)|
|Chopped mild green chilies||3 Ounce, drained (1 Can)|
|Chicken stock||1 Quart|
|Corn tortillas||12 , cut into wedges|
|Monterey jack cheese||1⁄4 Pound, grated|
In a large heavy saucepan, fry bacon and onions over medium heat until crisp.
Stir in chicken, green chiiies and stock.
Warm over medium heat and sprinkle with tortillas and grated cheese.
