Gingered Peach Fruit Soup
|Sliced peeled peaches||2 Cup (32 tbs)|
|Orange juice||1 1⁄2 Cup (24 tbs), chilled|
|Vanilla low fat yogurt||18 Ounce (3 Containers)|
|Lemon juice||1 Tablespoon|
|Grated ginger||1 Tablespoon, peeled|
Place peaches and orange juice in a blender or food processor; process until smooth.
Pour half of peach mixture into a bowl.
Add yogurt and next 3 ingredients to peach mixture in blender; process until smooth.
Pour yogurt mixture into reserved peach mixture; stir well.
