Easy Tomato Bean Soup
|Vegetable cooking spray||1|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Seeded chopped jalapeno pepper||1 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Canned no salt added stewed tomatoes||14 1⁄2 Ounce, undrained (1 Can)|
|Water||1 1⁄4 Cup (20 tbs)|
|Canned pinto beans||15 Ounce, drained (1 Can)|
|Ground white pepper||1⁄4 Teaspoon|
|Minced parsley||1 Teaspoon|
Coat a nonstick skillet with cooking spray,-place over medium-high heat until hot.
Add onion, jalapeno pepper, and garlic; saute until render.
Add tomatoes and next 3 ingredients; bring to a boil, stirring occasionally.
Cover, reduce heat, and simmer for 15 minutes.
