Warm Pear Soup With Ginger And Hazelnuts

Ingredients
  Ripe pears 3 , peeled and coarsely chopped (Such As Bosc / Bartlett)
  Unsweetened apple juice 2 Cup (32 tbs)
  Fresh ginger piece 1 Inch, peeled and thinly sliced
  Pear juice 1 Cup (16 tbs)
  Coarsely chopped toasted hazelnuts 2 Tablespoon
Directions

1 Combine the pears, apple juice, and ginger in a large saucepan; bring to a boil. Reduce the heat and simmer, covered, until the pears are very tender, 5-10 minutes (depending on the ripeness of the fruit). Let the mixture cool about 5 minutes.
2 Pour the mixture in batches into a blender and puree. Return the mixture to the pan and stir in the pear juice. Cook over low heat just until warm. Ladle the soup into bowls and sprinkle with the hazelnuts.
