Traditional Cream Of Mushroom Soup

Ingredients
  Butter 5 Tablespoon
  Mushrooms 1 Pound, sliced
  Chicken stock 1 Quart
  Butter 3 Tablespoon
  Flour 3 Tablespoon
  Heavy cream/Half and half 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  White pepper 1⁄4 Teaspoon
  Dry sherry 4 Tablespoon
  Chopped chives 1⁄4 Cup (4 tbs)
Directions

Melt butter in a saucepan; sauté mushrooms over medium heat stirring often.
Add stock and simmer, covered, for 15 minutes.
Drain mushrooms; reserve stock.
Puree mushrooms and return to stock.
In a small saucepan, melt butter; whisk in flour until absorbed
