Smoked Sausage Soup

Ingredients
  Olive oil 1 Teaspoon
  Low fat smoked sausage 14 Ounce, sliced (1 Package)
  Finely chopped onion 1 1⁄2 Cup (24 tbs)
  Finely chopped celery 1⁄2 Cup (8 tbs)
  Finely chopped carrot 1⁄2 Cup (8 tbs)
  Garlic/2 teaspoons bottled minced garlic 2 Clove (10 gm), minced
  Fat free low sodium chicken broth 32 Ounce (1 Carton)
  Canned diced tomatoes 14 1⁄2 Ounce (Undrained, 1 Can)
  Uncooked long-grain rice 1⁄3 Cup (5.33 tbs)
  Salt 1⁄2 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Fresh baby spinach 7 Ounce (1 Bag)
Directions

1. Heat oil in a Dutch oven over medium-high heat. Add sausage and next 4 ingredients, saute 4 minutes or until vegetables are tender.
2. Add chicken broth and next 4 ingredients, bring to a boil. Cover, reduce heat, and simmer 15 minutes or until rice is done. Remove from
heat, stir in spinach
