Chilled Curried Apple Soup

Ingredients
  Vegetable oil 1 Tablespoon
  Onion 1⁄4 Cup (4 tbs), chopped
  Celery 1⁄4 Cup (4 tbs)
  Garlic 1⁄4 Teaspoon, minced
  Apples 3 , peeled, cored and diced
  Curry powder 1 Teaspoon
  Turmeric 1⁄4 Teaspoon
  Chicken stock 8 Cup (128 tbs)
  Cilantro 1 Teaspoon, chopped
  Whipping cream 1⁄4 Cup (4 tbs)
  Apple 1 Cup (16 tbs), chopped
Directions

Heat olive oil in medium saucepan; add onion, celery and garlic.
Cook until softened.
Add apples; cook until fork tender.
Stir in curry powder and turmeric.
Add chicken stock.
Bring mixture to a boil.
Reduce heat to low; simmer until reduced by half.
Add cilantro; cool.
Puree in blender or food processor; strain.
Stir in cream; season with salt and pepper.
Chill several hours.
Garnish each serving with chopped apple.
