Spiced Tomato Soup

Ingredients
  Vegetable cooking spray 1
  Chopped peeled sweet potato 3⁄4 Cup (12 tbs)
  Chopped shallots 1⁄4 Cup (4 tbs)
  Garlic 2 Clove (10 gm), minced
  Sun dried tomato tidbits 2 Tablespoon
  Chili powder 1⁄4 Teaspoon
  Canned no salt added stewed tomatoes 14 1⁄2 Ounce (1 Can)
  Canned spicy hot vegetable juice 5 1⁄2 Ounce (1 Can)
Directions

Coat a medium saucepan with cooking spray, and place over medium-high heat until hot.
Add sweet potato, shallots, and garlic, and saute 4 minutes.
Add sun-dried tomato bits and remaining ingredients, and bring to a boil.
Cover, reduce heat, and simmer 40 minutes or until sweet potato is tender.
Place 3/4 cup of tomato mixture in container of an electric blender; cover and process until smooth.
Add tomato puree to mixture in pan; stir well.
