Spiced Tomato Soup
|Vegetable cooking spray||1|
|Chopped peeled sweet potato||3⁄4 Cup (12 tbs)|
|Chopped shallots||1⁄4 Cup (4 tbs)|
|Garlic||2 Clove (10 gm), minced|
|Sun dried tomato tidbits||2 Tablespoon|
|Chili powder||1⁄4 Teaspoon|
|Canned no salt added stewed tomatoes||14 1⁄2 Ounce (1 Can)|
|Canned spicy hot vegetable juice||5 1⁄2 Ounce (1 Can)|
Coat a medium saucepan with cooking spray, and place over medium-high heat until hot.
Add sweet potato, shallots, and garlic, and saute 4 minutes.
Add sun-dried tomato bits and remaining ingredients, and bring to a boil.
Cover, reduce heat, and simmer 40 minutes or until sweet potato is tender.
Place 3/4 cup of tomato mixture in container of an electric blender; cover and process until smooth.
Add tomato puree to mixture in pan; stir well.
