Savory Cream Of Cauliflower Soup
|Cauliflower head||1 Large|
|Lemon juice||2 Tablespoon (Juice Of 1 Lemon)|
|Minced onion||2 Tablespoon|
|Celery stalks||2 , minced|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Flour||1⁄4 Cup (4 tbs)|
|Chicken broth/Bouillon||4 Cup (64 tbs)|
|Light cream||2 Cup (32 tbs), scalded|
Wash cauliflower and break in flowerets.
Cook with lemon juice in small amount of boiling water until tender.
Drain and whirl cauliflower in blender until pureed, or force through food mill.
Saute onion and celery in the butter 2 or 3 minutes.
Blend in flour and stir in broth.
Cook, stirring, until slightly thickened.
Stir in cauliflower, cream, nutmeg, and salt.
Garnish with cheese.
