Mushroom Barley Soup
|Navy beans||3⁄4 Cup (12 tbs)|
|Green split peas||1⁄2 Cup (8 tbs)|
|Yellow split peas||1⁄4 Cup (4 tbs)|
|Barley||1⁄2 Cup (8 tbs)|
|Short ribs||2 Pound|
|Mushrooms||1 Pound, sliced|
|Onion||1 , thinly sliced|
|Carrot||1 Large, sliced|
Prepare soup one day in advance.
Combine all ingredients in a stockpot; cover with water.
Bring mixture to a boil over medium heat.
Reduce heat and simmer, partially covered, for 2 hours or until cooked.
Skim soup and add additional water as necessary.
