Cream Of Watercress Soup
|Regular strength chicken broth||1 Quart|
|Watercress sprigs||1 Quart, rinsed and drained well|
|Sour cream/Unflavored yogurt||1⁄2 Cup (8 tbs)|
In a 3- to 4-quart pan, bring broth to a boil over high heat.
Add watercress, cover, and simmer until it is tender to bite, 2 to 3 minutes.
In a blender, smoothly puree a portion at a time with sour cream.
Season to taste with pepper.
