Ham, Beans & Okra Soup
|Lean beef chuck||2 Pound, diced (Raw)|
|Tomatoes||12 Large, peeled and diced|
|Okra||1 1⁄2 Pound, cut into thin slices, crosswise (Fresh Or Frozen)|
|Boiling water||1 Cup (16 tbs)|
|Cooked lima beans||2 Cup (32 tbs)|
|Boiled cured ham||1 Pound, diced|
|Toasted croutons/Bread cut into small squares||1 Cup (16 tbs)|
In deep kettle, brown meat in butter.
Add tomatoes and okra.
Cover with boiling water and simmer, covered, over medium heat for 1 hour.
Then add 4 cups boiling water.
Bring to boiling point.
Lower heat and simmer, covered, stirring frequently.
Skim soup as it boils.
Cook until okra and tomatoes are soft.
Add the cooked Lima beans and diced ham.
Season with salt and pepper.
