Split Pea Soup
|Dried split peas||16 Ounce (1 Package)|
|Chopped onion||1 Cup (16 tbs)|
|Pared sliced carrots||1 1⁄2 Cup (24 tbs)|
|Cooked ham||1 Cup (16 tbs)|
|Salt||1 Teaspoon (Or To Taste)|
Combine dried peas and water; bring to a boil, reduce heat and simmer, covered, about 1 hour or until peas are soft.
If a smooth soup is desired, press peas through a sieve, return to sauce pot.
Add remaining ingredients and simmer gently about 30 minutes.
If mixture is too thick, more water may be added.
Pour hot into hot jars, leaving 1-inch head space.
Process pints 1 hour and 15 minutes, quarts 1 hour and 30 minutes at 10 pounds pressure.
