Ham Bone Summer Soup
|Ham bone||1 (With Some Meat Left On)|
|Butter beans||1 Cup (16 tbs)|
|Corn||1 Cup (16 tbs)|
|Potatoes||3 Medium, diced|
|Green beans||1⁄2 Cup (8 tbs), broken up|
|Green peas||1⁄2 Cup (8 tbs)|
|Celery stalks||4 , cut into pieces|
Put on ham bone in about 1 pint of cold water.
Let boil; add vegetables cut in desired pieces, except corn.
Allow to simmer 3 or 4 hours, until vegetables are tender.
Fifteen minutes before serving add fresh or canned corn.
Just before serving make a thin paste of the flour, milk, and beaten egg; stir into soup.
This makes a rich thickener, which is optional.
