Hot Onion Soup

Ingredients
  Butter 1⁄2 Cup (8 tbs)
  White onions 5 Cup (80 tbs), sliced
  Flour 1⁄4 Cup (4 tbs)
  Beef stock 1 1⁄2 Quart
  Salt 1⁄4 Teaspoon
  Cayenne pepper 1⁄4 Teaspoon
  Egg yolk 1
  Cream 1⁄2 Cup (8 tbs)
  Croutons 1 Cup (16 tbs) (Adjust Quantity As Needed)
  Freshly grated parmesan cheese 2 Tablespoon (Adjust Quantity As Needed)
Directions

Melt butter in a heavy saucepan; saute onions until tender.
Whisk in flour until absorbed.
Add stock, sait and cayenne; bring to a boil.
Reduce heat and simmer, covered, for 10 minutes.
Blend egg yolk and cream; stir in 4 tablespoons soup and return mixtu
