Bronco Buster Soup

Ingredients
  Dry pinto beans 1 1⁄4 Cup (20 tbs)
  Water 6 Cup (96 tbs)
  Beef shank 1 Pound
  Chopped onion 1 Cup (16 tbs)
  Salt 2 Teaspoon
  Dried thyme 1⁄2 Teaspoon, crushed
  Pepper 1 Dash
  Potatoes 2 Medium, peeled and diced
  Carrots 2 Medium, sliced
Directions

Rinse beans.
Place in large saucepan and add 6 cups water.
Soak overnight.
Do not drain.
Add beef shank, onion, salt, thyme, and pepper; bring mixture to boiling.
Reduce heat; simmer, covered, 1 1/4 hours, stirring occasionally.
Remove shank; cool.
Cut off meat and dice; discard bones.
Mash beans slightly.
Add meat, potatoes, and carrots to soup.
Cover; simmer till vegetables are tender, about 30 minutes more.
