Chilled Tomato Soup
|Sweet basil||1⁄4 Teaspoon|
|Water||1 Cup (16 tbs)|
|Buttermilk||3 Cup (48 tbs)|
|Light cream||1 Cup (16 tbs)|
|Chopped chives||1 Tablespoon|
|Croutons||1⁄2 Cup (8 tbs)|
Wash tomatoes and chop into saucepan.
Add sweet basil and water.
Set over moderate heat and simmer 15 minutes or until tomatoes are broken up.
Press through sieve to form a puree (or use a blender).
Add salt and stir until dissolved.
Add buttermilk and cream and chill thoroughly.
