Savory Carrot Soup

Ingredients
  Vegetable cooking spray 1
  Reduced calorie margarine 2 Teaspoon
  Chopped onion 1 1⁄2 Cup (24 tbs)
  Sliced carrot 2 3⁄4 Cup (44 tbs)
  Diced red potato 1 1⁄2 Cup (24 tbs)
  Canned no salt chicken broth 3 Cup (48 tbs) (Undiluted)
  Unsweetened orange juice 3⁄4 Cup (12 tbs)
  Dried whole thyme 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

Coat a large saucepan with cooking spray; add margarine, and place over medium-high heat until margarine melts.
Add onion and carrot; saute until crisp-tender.
Add potato and chicken broth; bring to a boil.
Cover, reduce heat, and simmer 25 minutes or until carrot is tender.
Position knife blade in food processor; add carrot mixture in batches.
Process 1 minute or until mixture is smooth.
Return carrot mixture to saucepan; add orange juice, dried whole thyme, salt, and pepper.
Cook, uncovered, until thoroughly heated.
