Savory Carrot Soup
|Vegetable cooking spray||1|
|Reduced calorie margarine||2 Teaspoon|
|Chopped onion||1 1⁄2 Cup (24 tbs)|
|Sliced carrot||2 3⁄4 Cup (44 tbs)|
|Diced red potato||1 1⁄2 Cup (24 tbs)|
|Canned no salt chicken broth||3 Cup (48 tbs) (Undiluted)|
|Unsweetened orange juice||3⁄4 Cup (12 tbs)|
|Dried whole thyme||1⁄2 Teaspoon|
Coat a large saucepan with cooking spray; add margarine, and place over medium-high heat until margarine melts.
Add onion and carrot; saute until crisp-tender.
Add potato and chicken broth; bring to a boil.
Cover, reduce heat, and simmer 25 minutes or until carrot is tender.
Position knife blade in food processor; add carrot mixture in batches.
Process 1 minute or until mixture is smooth.
Return carrot mixture to saucepan; add orange juice, dried whole thyme, salt, and pepper.
Cook, uncovered, until thoroughly heated.
