Minty Cantaloupe Soup
|Cantaloupe||1 , peeled, seeded, and cut into chunks|
|Unsweetened orange juice||3⁄4 Cup (12 tbs)|
|Lime juice||3 Tablespoon|
|Peppermint extract||1⁄4 Teaspoon|
|Skim milk||1 Cup (16 tbs)|
Combine first 4 ingredients in container of an electric blender or food processor; top with cover, and process until smooth.
Transfer mixture to a bowl.
Stir in milk.
Cover and chill at least 2 hours.
Stir soup before serving.
Ladle soup into individual bowls, and garnish with fresh mint sprigs,
