Chicken Curry Soup (Somlor Curry Siche Moan)

Tasty Cambodian Chicken and bamboo curry. I question the amount of sugar-seems way off to me. I'd add 2 teaspoons, taste, and adjust to your taste.
Ingredients
  Young chicken 1
  Vidalia onion 4 , sliced
  Green beans 1⁄2 Pound, cut
  Carrots 5 Large, sliced
  Idaho potatoes 5 Large, cut
  Bamboo 2 Can (20 oz)
  Curry paste 1⁄4 Cup (4 tbs) (lime leaves, lemon grass, galangal, rizhome, curry, dried red peppers, garlic)
  Shrimp paste 2 Tablespoon
  Red curry paste 2 Tablespoon
  Fish sauce 1 Cup (16 tbs)
  Salt 1 Tablespoon
  Sugar 3⁄4 Cup (12 tbs)
  Coconut cream 1 1⁄2 Can (15 oz)

Story
Cambodian curries are much like Thai curries-same ingredients, but this technique of mixing the shrimp paste and curry paste with the coconut milk is different. Normally you would fry thecurry paste in thick part of coconut milk until it is very fragrant, and you would toast the shrimp paste to develop flavour i.e. looses the strong smell by doing this.
