Vegetable And Meatball Soup

Ingredients
  Onion 1⁄2 Medium, chopped
  Carrot 1 Medium, chopped
  Celery 1⁄2 Cup (8 tbs), chopped
  Vegetable oil 1 Tablespoon
  Tomato 1 Medium, peeled and chopped
  Ground ginger 1⁄4 Teaspoon
  Cumin 1⁄4 Teaspoon
  Paprika 1⁄4 Teaspoon
  Fresh parsley 1 Tablespoon, chopped
  Beef broth 1 Quart
  Tomato sauce 1⁄4 Cup (4 tbs)
  Lentils 1⁄4 Cup (4 tbs), uncooked
Directions

1. Saute onion, carrot, and celery in oil until tender.
2. Add remaining ingredients except meatballs. Simmer 30 minutes.
3. Make 8 meatballs with remaining ingredients. Add to soup. Simmer 15 minutes or until meat is done.
