Winter Squash Soup
|Cooking oil||1 1⁄2 Teaspoon|
|Finely chopped onion||1⁄4 Cup (4 tbs)|
|Curry powder||2 Teaspoon|
|Ground ginger||1⁄2 Teaspoon|
|Frozen cooked winter squash||24 Ounce, thawed (Two 12 Ounce Packages)|
|Reduced-sodium chicken broth||1 Cup (16 tbs)|
|Apple juice/Apple cider||1 Cup (16 tbs)|
|Plain fat free yogurt/Fat-free dairy sour cream||1⁄2 Cup (8 tbs)|
ln a large saucepan heat oil over medium heat.
Add onion, curry powder, and ginger.
Cook and stir for 2 minutes.
Stir in squash, chicken broth, apple juice, and salt.
Top each serving with yogurt.
