Winter Squash Soup

Ingredients
  Cooking oil 1 1⁄2 Teaspoon
  Finely chopped onion 1⁄4 Cup (4 tbs)
  Curry powder 2 Teaspoon
  Ground ginger 1⁄2 Teaspoon
  Frozen cooked winter squash 24 Ounce, thawed (Two 12 Ounce Packages)
  Reduced-sodium chicken broth 1 Cup (16 tbs)
  Apple juice/Apple cider 1 Cup (16 tbs)
  Salt 1⁄4 Teaspoon
  Plain fat free yogurt/Fat-free dairy sour cream 1⁄2 Cup (8 tbs)
Directions

ln a large saucepan heat oil over medium heat.
Add onion, curry powder, and ginger.
Cook and stir for 2 minutes.
Stir in squash, chicken broth, apple juice, and salt.
Heat through.
Top each serving with yogurt.
